Pasteurization, a simple process of heating milk to kill bacteria, has been a cornerstone of public health, preventing countless illnesses and deaths.
The statistics are alarming. A 2017 study in the journal Emerging Infectious Disease revealed that unpasteurized dairy products lead to 840 times more illnesses and 45 times more hospitalizations than their pasteurized counterparts. The study further predicts a steady increase in illnesses as raw dairy consumption rises, with a potential 96% surge in outbreak-related illnesses if consumption doubles.
But here's where it gets controversial: lawmakers in Iowa, Oklahoma, and Michigan are pushing for bills that would make raw milk more accessible. Iowa's House File 2444 would allow raw milk sales at farm stores and food establishments, and even permit the sale of homemade food without safety inspections in grocery stores. Oklahoma's bill has already passed the House Agriculture Committee, and Michigan's bills (HB 5217-5219) would enable direct farm-to-consumer sales of unpasteurized dairy.

Dr. Pamela Ruegg, an epidemiologist and veterinarian, highlights the challenge of ensuring milk remains uncontaminated during the milking process, even with strict safety protocols.
Raw milk can lead to sickness and even death, especially among vulnerable populations like pregnant people, children, and the elderly. Listeria, a bacteria found in raw milk, causes about 1,250 infections and 172 deaths annually in the US, making it a significant public health concern.
